    Grilled Vegetables

    List of Ingredients

    • 1/4 c. vinegar
    • 3 Tbsp. lemon juice
    • 1 envelope Dry Italian Dressing Mix
    • 1/2 c. oil
    • 2 lbs. cut up vegetables(zucchini, red peppers, yellow peppers, green peppers, new ppotatoes, squash, onnions, or mushrooms)


    1. Pour vinegar and oil into shaker container. Add dressing mix. Mix well. Reserve 1/4 c. dressing and refrigerate.
    2. Pour remaining dressing on vegetables;cover. Marinate in refrigerator 30 minutes to 1 hour.
    3. Grill vegetables over medium-hot coals 10 minutes or until tender, basting with reserved 1/4 c. dressing.

    Final Comments

    Makes 6 cups.
