Zucchini Nut and Raisin Bread

List of Ingredients




3/4 cup zucchini, grated
2 tsp. salt
2 tsp. active dry yeast
3 cups bread flour
1/3 cup rolled oats
3 tbs. cracked wheat
3 tbs. powdered milk
1/4 cup sugar
1-1/2 tsp. ground cinnamon
3/4 tsp. ground nutmeg
3 tbs. oil
1 egg
1 egg yolk
1/2 cup water
3/4 cup raisins and/or nuts


Recipe



Put grated zucchini in a colander or strainer. Sprinkle with half
the
salt, let drain for 30 minutes, and squeeze dry. Add all ingredients
except the raisins and/or nuts in the order suggested by your manual.
Bake on raisin bread cycle. Add raisins and/or nuts at beeper.
