    2 cups shredded sharp cheddar cheese
    2 cups shredded Monterey Jack cheese
    3 eggs
    1/2 cup green taco sauce (mild, medium hot or hot)

    Recipe



    Mix the cheeses together. Beat eggs and taco sauce together. In a
    buttered
    shallow ovenproof dish (quiche dish or pie plat) scatter 2 cups of
    cheese, pour
    egg and taco mixture over this and scatter the remaining 2 cups of
    cheese on
    top. Bake at 325 for 20 to 30 minutes. Serve with your favorite
    crackers.
    Bonus: some Like It Hot: add a few chopped jalapeno peppers on top of
    the egg and
    taco sauce. Great with those slushy Margaritas or Margarita wine
    coolers.
