    "Fruits In Cooking: A Selection Of Unsusual and Classic Fruit
    Recipes"

    List of Ingredients




    Zest of 8 lemons
    1 cup water
    Juice of 8 lemons
    1 cup sugar (or more -- to taste)

    Recipe



    (1) In a saucepan, combine the
    lemon zest and water. Simmer the
    mixture, covered, for 10 minutes.
    Remove the zest and reserve the
    liquid.

    (2) To the reserved lemon water,
    add the lemon juice. Measure the
    liquid.

    (3) For each 2 cups of liquid, add
    1 cup of sugar. Boil this mixture
    until it is syrupy. Store the syrup in
    sterilized jars.

    Preparation: 15 minutes

    Description:
    "For a cooling drink, add either water or soda water to 2
    Tablespoonsful
    of syrup per serving. It keeps well in the refrigerator."
