    Overnight Granola Topped French Toast

    List of Ingredients




    1 lb loaf french bread
    4 eggs
    3 cups milk
    1 teaspoon vanilla
    1/2 teaspoon cinnamon
    1/2 cup raisins
    TOPPING
    2 tablespoons margarine
    2 tablespoons maple syrup or honey
    3/4 cup brown sugar -- packed
    1/2 cup granola

    Cut or tear bread into 2-inch cubes. Coat a 13-by-9-inch baking pan
    with nonstick spray. Scoop the bread cubes into the pan and spread
    into an
    even layer. Break the eggs into a large bowl; beat lightly with
    fork. Add
    milk, vanilla, cinnamon and raisins; mix well. Pour the egg mixture
    over
    bread, making certain all the bread is softened. Cover pan tightly
    with
    plastic wrap and refrigerate overnight. The next monrning, remove pan
    from
    refrigerator. Heat oven to 350 . In a small pan, melt the
    margarine, honey
    or syrup and brown sugar. When melted and mixed together, stir in
    granola
    or nuts. Drop mixture by spoonfuls over the top of the bread and
    bake for
    30 minutes. Let cool several minutes before serving.
    Yields 10 servings.
