    List of Ingredients




    1 tbsp butter
    1 tbsp vegetable oil
    3 medium red potatoes* -- peeled and cut into
    1/2" cubes
    2 tbsp Dijon mustard
    1/4 cup water
    3 small onions -- thinly sliced
    1 lb cooked ham -- cut into 1/2" cubes
    2 tbsp chopped parsley
    salt and pepper

    Be sure to cut the potato cubes no larger than 1/2". Small cubes cook
    faster than large ones. In a large skillet, heat butter and olive
    oil over
    medium heat. Add potatoes; saute until tender and lightly browned,
    about 10
    minutes. Meanwhile, combine Dijon mustard and water. Remove potatoes
    from
    skillet; add onions, ham and mustard mixture. Cover skillet and cook
    ham
    mixture over medium heat for 5 minutes or until onions are tender.
    Uncover;
    add potatoes and parsley and saute briefly, scraping brown bits from
    bottom
    of pan. Season with salt and pepper. Serve immediately. Yield: 6 to 8
    servings.
