Dixie Crab Bake

1/4 c. margarine or butter
2 T. all purpose flour
1 c. half and half
1 t. prepared mustard
1/2 t. salt
1/4 t. pepper
1/4 t. ground mace
1 T. lemon juice
1 c. cooked sliced carrots
2 cans (6 1/2 oz. ea.) crabmeat, drained and cartilage removed
2 hard cooked eggs, finely chopped
1/2 c. soft bread crumbs
2 T. margarine or butter, melted
Recipe
Heat 1/4 c. margarine in 2 qt. saucepan
over low heat until melted. Stir in flour.
Cook; stirring constantly, until smooth
and bubbly; remove from heat. Stir in
half and half. Heat to boiling, stirring
constantly. Boil and stir 1 min.; reduce
heat. Fold in seasonings, lemon juice,
carrots, crabmeat and eggs. Put into
ungreased 1 1/2 qt. casserole or
10x6x1 1/2" baking dish. Mix bread
crumbs and 2 T. margarine; sprinkle
over top. Cook uncovered in 350° oven
until hot, about 45 min. Makes 4 to 6
servings.
