    Linda's Quick & Easy Salmon Patties

    List of Ingredients




    1 can (15 oz.) pink salmon (reserve juice)
    1 egg
    1/2 C. cracker crumbs
    1 tsp. baking powder

    Recipe



    Pour off juice from salmon and set aside. Remove bones and skin from
    salmon. Stir in egg and cracker crumbs with salmon. In a small bowl
    add baking powder to ¼ cup of salmon juice. Mixture will foam. After
    foaming stops add to salmon mixture. Drop mixture by teaspoons full
    in hot oil in skillet. Brown lightly on both sides. Serve hot.
