    List of Ingredients




    1 pound salmon steaks -- cut into 2" wide lengths
    3 each eggs -- scrambled
    1 tablespoon horseradish mustard
    1 cup bread crumbs
    1 can spinach leaf, whole -- drained
    1 can stewed tomatoes -- sliced
    1 can sliced mushrooms -- drained
    2 tablespoons seafood seasoning
    cooking oil spray
    2 tablespoons dried onions
    salt and pepper -- to taste
    1 tablespoon chives

    Recipe



    preheat oven 375 degrees and spray cooking oil in 9x9" glass dish. Cut
    salmon steaks into 2" lengths. You should be able to get 4 lengths out
    of a pound. Pat dry with a paper towel.

    drain spinach and mushrooms and combine spinach, mushrooms, dried
    onions and tomatoes in a container. Let sit covered while salmon is being
    prepared.

    In a bowl, combine scrambled eggs and mustard.

    On a paper plate, pour bread crumbs and spices together.

    Pour vegetable mixture into glass dish.

    With a fork, drag a salmon length through egg mixture, and then the
    bread crumb mixture. Repeat and place on top of vegetable mixture.

    Bake for approximately 35 minutes (depending on thickness of salmon
    steaks).
