    HOMEMADE BANANA DOUGHNUTS...15 cents for this meal
    Note from jo: this is an new to me recipe and we will only
    make 1/2 of it.
    SERVING SIZE 1-2 DOUGHNUTS PER PERSON
    5 cups all-purpose flour
    3 teaspoons baking powder
    1 teaspoon soda
    2 teaspoons salt
    1 teaspoon nutmeg
    1/4 cup shortening
    1 cup sugar
    1 1/2 teaspoon vanilla
    3 eggs, well beaten
    3/4 cup mashed bananas
    1/2 cup buttermilk
    1/2 cup flour for rolling
    Deep oil for frying
    Sift flour, measure and resift 3 times with baking powder,
    soda, salt, and nutmeg. Cream shortening, blend in sugar,
    add vanilla, and eggs, and beat until light and fluffy. Add
    combined bananas and buttermilk, and stir until well mixed.
    Add flour mixture in 3 or 4 portions, stirring thoroughly
    after each addition. Chill before rolling. Remove 1/4 of
    dough from refrigerator at a time, knead it lightly 4 or 5
    times, roll to 3/8 inch thickness, and cut with floured
    2-1/2 inch doughnut cutter. Fry in deep oil heated to 375
    deg F. until golden brown, then lift out and drain on
    absorbent paper. If desired, the dough may be covered
    tightly and kept in the refrigerator for 1 to 2 days, to be
    fried as needed.
    HOT CHOCOLATE CHAI TEA....35 cents
    I brewed a big pot of orange herbal spiced tea / green tea
    and ,mixed 3 cups of it with evapaoated [canned] milk,
    sweetned powdered double chocolate cocoa powder.
    WATER
    ORANGE/PINEAPPLE/ BANANA JUICE...30 cents
    6 ounces per serving of this pure juice

    LUNCH/DINNER...$1.90 FOR 3 OR 63 CENTS PER PERSON
    FRESH AVOCADOS HALVES SURROUNDING A GARDEN SALAD
    We are long on avocados other wise we would have the salad.
    GRILLED CHESSE[S] AND HAM SANDWICH QUESADILLAS
    Homemade flour tortillas, 1/2 ounce cheese per serving, a
    thin slice of ham about 2 ounces,salsa or what ever you
    liketo serve with them.
    MEXICAN RICE
    This is a bland dish I invennter over 30 years ago. It is
    just condensed tomato soup stirred into cookd.sprinkled with
    a cheese garnish [which melts] and optional sliced green
    onion tops.
    CHILI BEANS
    WATER ESSENCE
    FRIED BANANA /CHOCOLATE BURRITOS
    We are adding chopped miniature snickers or milky way candy
    bars to ours ,p-nut butter and or cups work well also.
    Great way to use up holiday candy. We have tons of Christmas
    left.

    STEWED TOMATOES
    SCALLOPED POTATOES...
    I am parboiling yellow yukons to use. Our scalloped
    potatoes have cottage cheese layers, Start on the oiled
    bottomof a baking pan,add thin layer of sauce, sliced
    potatoes, onions,cottage , other chesse[s] ,sauce and then
    repeat layers top with cheese . One can top with bread
    crumbs,tomato slices etc. We like th etop to be lightly
    browned qand bubbly..as we do the sides.
    SWEET AND SOUR GREEN BEANS
    WATER
    PINEAPPLE JUICE TEA
    1 part juice to 2 parts tea
    We are using tea brewed this morning as I brewed a green tea
    with it.
    CARROT/RAISIN/PINEAPPLE MINI CAKES
