    2 c. pickling lime
    8 1/2 qt. water
    1 c. vinegar
    2 gallons large cucumber slices
    1 small bottle red food
    coloring
    1 Tbsp. alum
    3 1/2 c. water
    3 1/2 c. white vinegar
    8 c. sugar
    3 (6 oz.) bags cinnamon red
    hots candy
    8 sticks cinnamon

    Recipe



    Prepare 2 gallons of sliced cucumbers. Peel cucumbers;
    cut crosswise in 1/2-inch rings. Cut seeds out of center.
    Let
    stand in mixture of lime and water in a crock for 24 hours.
    Remove. Rinse 3 times. Soak in ice water 3 hours. Drain.
    Mix and simmer vinegar, food color and alum for 5 minutes.
    Add
    to rings. Add enough water to cover rings. Simmer 2 hours;
    drain. Simmer water, vinegar, sugar, red hots and cinnamon.
    Pour over rings. Let stand 24 hours. Drain mixture and add 1

    cup sugar. Bring to boil. Pour over rings. Let stand 24
    hours. Drain; add sugar, boil and let stand 24 hours again.
    Bring to boil and seal in sterilized jars.
    Note: The pickles stand 24 hours 3 times.
