List of Ingredients
4 large sweet potatoes
1/4 cup butter at room temperature
1/2 t. salt
1/2 t. cinnamon OR 1/4 t. cinnamon and 1/4 t. nutmeg
1/2 cup sugar
1 t. grated orange rind
3/4 cup chopped pecans
large marshmallows
Recipe
boil potatoes until very tender. drain and peel while still warm. place
in mixing bowl and mash until smooth. beat in butter, salt,
cinnamon/nutmeg and sugar. when well blended, stir in orange rind and pecans. turn
into a well-buttered, shallow casserole dish. cover surface completely
with marshmallows and bake in a preheated 350 degree oven until
marshmallows are melted. set oven to medium-broil and cook until marshmallow
topping is lightly browned. serve immediately.
