    3 tablespoons butter or margarine, softened
    1/2 teaspoon garlic salt
    1 teaspoon parsley flakes
    3 whole chicken breasts, split, boned and skinned
    3 tablespoons olive oil
    1/4 teaspoon season salt
    1 cup cracker crumbs
    1/3 cup evaporated milk
    Toothpicks
    Lemon wedges

    Mix well butter or margarine, garlic salt and parsley. Shape into a stick (like a stick of butter). Cover and freeze one hour.

    Place chicken on a sheet of waxed paper. Flatten with a meat mallet of rolling pin to 1/4-inch thickness.
    Place 1/6 of butter mixture in the center of each breast half. Fold long sides of chicken over butter. Fold ends over and secure with toothpicks. Preheat oven to 425 degrees. Spread oil in 13 x 9 x 2-inch baking pan. Combine crumbs and season salt on a sheet of waxed paper. Dip chicken into milk and then coat with crumb mixture. Place chicken with seam side up in prepared pan. Bake 15 minutes. Turn each piece over and bake an additional 10 minutes.

    Serve with lemon wedges.
