    Chicken and mushroom casserole

    Serve over rice and garnish with grated old cheddar or Montery Jack.


    List of Ingredients


    • 4 boneless, skinless chicken breasts, cut into strips
    • 1 cup of carrots, sliced
    • 1 cup of broccolli florets
    • 1-1.5 cups of sliced mushrooms
    • 1 can of Campbell's cream of mushroom soup (do NOT use concentrate; use the soup that is ready to eat)
    • 1 cup of grated cheese for garnish


    Instructions


    1. Preheat oven to 400C and set rice to cook.
    2. Saute chicken in 2 Tbsp of olive oil or your choice of cooking spray.
    3. Steam in microwave or boil carrots until just tender. Set aside.
    4. Steam in microwave or boil broccolli until just tender. Sert aside.
    5. Saute mushrooms in butter until tender. Set aside.
    6. Add chicken, carrots, broccoli, and mushrooms toa medium, ovenproof casserole dish with a lid.
    7. Pour soup over ingredients, trying to cover top evenly (as it cooks, it will seep down).
    8. Bake in oven for about 15 minutes or until you see the sauce bubbling. Takes about the same amount of time as it takes the rice to cook.
    9. Serve casserole over rice and sprinkle each serving with cheese.
