Beef & Cheese Chimichangas

1tbsp oil
1lb ground beef
Burrito seasoning mix
8 Burrito tortillas
3 green shallots, finely chopped
1/4 cup slivered almonds
1 cup grated tasty cheese
1/4 cup waterRecipe
Preheat oven to 400F. Heat oil in a large non-stick frying pan, add mince and cook until well browned. Stir in Burrito seasoning mix, water, shallots and almonds. Simmer for a further 3 minutes. Cool, then fold through cheese.
Heat Burrito tortillas in microwave according to packet instructions (high for 30 seconds). Spoon 1/3 cup of mince mixture onto centre of each tortilla. Moisten tortilla edges slightly with water, fold all ends inwards like a parcel and turn over.
Brush Chimichangas lightly with oil, place onto a baking tray lined with baking paper. Bake 15-20 minutes or until golden brown. Serve with tomato sauce or salsa.
Serves 4, makes 8. Preparation 15mins. Cooking 30mins.
