Boursin chicken

List of Ingredients
4 chicken breasts, sliced up
Mushrooms, sliced �about 2 cups
Butter
� pint sherry
� pint chicken stock
� pint half and half
1 large Boursin (or Rondelle) cheese
Recipe
Sautee the mushrooms and then put them into a casserole dish. Then sautee the chicken strips in butter and oil. Remove from pan and add to the mushrooms. Add the stock to the saut�ing pan, bring to the boil, add the half and half, then the sherry, then add the cheese and smash it. Simmer the sauce for a couple of minutes until everything is smooth, then pour on top of the chicken and mushrooms and put the casserole in the oven for 30 minutes.
