    List of Ingredients




    ½ cup of onions minced
    ¼ cup of minced parsley
    ¼ cup of butter
    1/2 tsp of nutmeg
    ½ tsp of salt
    pepper to taste
    1 cup of spinach (cooked, drained, & minced)
    2 cups of cooked, minced chicken
    ¾ cup of heavy cream
    1 cup of ricotta cheese
    ¼ cup of Parmesan cheese

    Sautee the onions in the butter until soft. Stir in the spinach and the spices. Then you add the chicken and the cheeses and stir until well combined. Stir in the heavy cream and simmer until the cream is reduced by half. Add parsley, salt and pepper. Cool the mixture, fill the crepes with 2 tablespoons of the mixture and arrange in two 9” X 12” pans.


    Béchamel Sauce:

    (Might have to double the sauce recipe)

    1 cup of chicken broth
    1 cup of heavy cream
    ¼ cup of butter
    ½ cup of Parmesan cheese
    ¼ cup of flour
    ½ cup of grated Monterey Jack cheese

    Melt the butter and add the flour. Add the chicken stock gradually while stirring.

    Manicotti Shell recipe: (Makes 22 shells)

    8 eggs
    2 cups of warm water
    2 cups of flour
    wax paper
    2 pinches of salt

    Hand beat all ingredients with a whisk until the lumps are mostly gone. Take a ¼ cup to ½ cup of batter and pour into the hot pan after coating with butter. (Note: butter does not have to be put in pan after each crepe – recommend every 2 or 3. Also before pouring batter remove pan from heat and swirl until just the bottom of the pan is coated.) Watch as crepe cooks/dries from the outside in. Once crepe looses its glossy look at the center simply turn upside-down and flop crepe onto a sheet of previously cut wax paper. Place wax paper over cooling crepe and repeat process.
