    New Brunswick Chicken Stew (serves 6)

    This one is even yummier when it is refrigerated overnight and reheated the next day

    List of Ingredients




    1 stewing chicken
    2 quarts (8 cups) water
    2 large yellow onions
    4 cups fresh chopped tomatoes
    3 medium potatoes
    4 cups fresh sweet corn
    3 tablespoons salt
    1 teaspoon pepper
    1 tablespoon sugar

    Recipe



    1. Cut chicken into pieces and put in crockpot with 2 quarts water. Cook covered on high setting for 2 hours. Remove chicken and set aside to cool.

    2. Peel and slice onion into 1/4 inch thick rings. Cut tomatoes in 1/2 inch cubes. Peel and cut potatoes into 1/2 inch cubes. Remove chicken from bones.

    3. Add meat, onions, tomatoes, potatoes, sweet corn, salt, pepper and sugar to crockpot. Cook covered on low setting for 6-8 hours.
