    List of Ingredients


    • 2 pounds ground beef OR ground turkey
    • 2 tablespoons oil
    • 2 cans diced tomatoes
    • 1 can tomato sauce
    • 2 tablespoons chili powder
    • 2 teaspoons cumin
    • 1 can Ortega diced chiles
    • 1 can kidney beans
    • 1 onion, chopped
    • 1 can black olives
    • Garlic, to taste
    • Salt and black pepper, to taste
    • 2 teaspoons cilantro
    • 2 cups (or more) cheddar cheese
    • 20 corn tortillas
    • Sour cream and salsa


    Instructions


    1. In a large skillet, brown the meat, onions and garlic in the oil. Drain.

    2. Add the tomato sauce, tomatoes, chili powder, cumin, chiles and kidney beans. Bring to a boil, cover and simmer 20 minutes. Season to taste with salt and pepper. Add the olives and cilantro.

    3. Line a 9x13" pan with one-third of the tortillas. Top with one-third of the meat sauce and one-third of the cheese. Repeat the layers, making two more layers but reserving one-third of the cheese.

    4. Bake, uncovered, at 350 for 30 minutes. Sprinkle with the remaining cheese. Let stand 15 minutes before serving.

    5. Serve with sour cream and salsa.



    Final Comments


    We chose to make this with the turkey when we made this and prepared it without the black olives and with flour tortillas instead of corn. It was still really good!
