    "The Microwave Library: Cooking with Vegetables"

    List of Ingredients




    1 cup cooked, sliced potato
    a little butter
    4 eggs
    Salt and freshly ground pepper
    Freshly chopped herbs or chives (optional)

    Recipe



    Put the potato in 1 or 2 layers in a buttered microwave-safe dish (shallow, like a pie plate). Cover with a microwave-safe lid or platic wrap with slits cut in top to vent, and cook for 45 seconds.

    Beat together the eggs, seasoning and chives or herbs if used, and pour them over the potatoes. Cook on low power for 8 minutes, or until almost set.

    Let stand for 1-2 minutes, then cut into two pieces and serve.

    Serves 2.

    (Good served cold as a picnic dish.)

    (This is a good way to use leftover potatoes.)
