    Country Ham and Red-Eye Gravy

    List of Ingredients

    6 (1/4-inch thick) slices country ham
    1/4 cup margarine
    1/4 cup firmly packed brown sugar
    1/2 cup strong black coffee

    Recipe

    Cut gashes in fat to keep ham from curling. Saute' ham in margarine in a heavy skillet over low heat until light brown, turning several times. Remove ham from skillet; keep warm.

    Stir sugar into pan drippings. Cook over low heat until sugar dissolves, stirring constantly. Add coffee to pan drippings, stirring well. Simmer gravy 5 minutes, and keep warm.

    Serve gravy over ham.
