    Fluffy Potato Casserole

    List of Ingredients

    2 cups mashed potatoes
    1 (8 oz.) package cream cheese, softened
    1 small onion, finely chopped
    2 eggs, well beaten
    1 tblsp. all-purpose flour
    1/4 tsp. salt
    1/8 tsp. pepper
    1 (3 oz.) can French-fried onion rings, crushed

    Recipe

    Combine first 7 ingredients; beat 2 to 3 minutes at medium speed of electric mixer. Pour into a greased 1 1/2 quart casserole. Spread crushed onions evenly over top. Bake, uncovered, at 300 deg. for 30-35 minutes.

    Yield: 4 servings
