    Source of Recipe

    "Southern Living", March 1991

    List of Ingredients

2 lb. new potatoes, unpeeled and sliced
    2 tbsp. dry white wine
    2 tbsp. finely chopped shallots
    1 1/2 cups whipping cream
    1/4 cup chopped fresh basil
    1/4 tsp. salt
    1/8 tsp. white pepper

    Recipe

Cook potatoes in boiling salted water to cover 10 to 15 minutes. Drain carefully, leaving skins intact. Keep potatoes warm.

Combine wine and shallot in a large saucepan. Bring to a boil, and cook one minute. Add whipping cream; return to a boil. Reduce heat, and simmer 20 minutes, stirring occasionally. Stir in basil, salt and pepper.

Arrange potatoes on a serving plate; spoon sauce over potatoes. Serve immediately. 8 servings.
