    1 lb. new potatoes, washed and scrubed
    2 lb. fresh peas (about 4 cups of shelled peas)
    4 tbsp. water
    2 strips of bacon
    2/3 cup cream
    Paprika
    Mint leaves or chopped chives (optional)

    Recipe



    Put the potatoes and peas in a microwave-safe dish with the water, cover with a microwave-safe lid or with plastic wrap with slits cut in top to vent, and microwave for about 8 minutes. Test the potatoes before the cooking time is up. You should not overcook them or they will be spongy.

    Put the bacon strips on a microwave browning dish, cover with a sheet of paper towel to stop them from splattering, and cook for 1 1/2 minutes. Chop up the bacon and mix in with the vegetables.

    Heat the cream in a microwave-safe bowl for 1-2 minutes. Pour over the vegetables and sprinkle with paprika.

    Serve garnished with mint leaves or chopped chives if desired.

    Serves 4.
