    1 large red onion
    1 large yellow Spanish onion
    3 cups unbleached all-purpose flour
    1 tbsp. cayenne
    1 tbsp. paprika
    Salt and black pepper
    5 cups vegetable oil for frying

    Recipe



    Peel the onions and slice them thinly. Seperate into rings and set aside.

    Mix the flour and cayenne, paprika, salt and black pepper in a bowl, and heat the vegetable oil in a deep fryer or heavy saucepan to a temperature of 375 F.

    Dredge some of the onion rings in the flour, shaking off any excess, and fry until golden brown, making sure the rings do not stick together. Remove from the oil with a slotted spoon, drain on paper towels, and keep warm while frying the remaining onions. Serve immediately. Recipe by Dean Fearing of Dallas, Texas.

    Note: Do not dredge the onions until just prior to frying or they will give off too much moisture.
