Really Quick, Really Easy Apple Cake

List of Ingredients

1 c sugar
3 Tbsp shortening
2 eggs
1 c flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
2 apples, peeled and cut into small pieces
butter
cinnamon and sugar


Recipe

Mix together sugar, shortening, eggs, flour, baking powder, salt and vanilla.
When blended, add apples. Pour into 8x8x2-in greased cake pan. Dot with butter. Sprinkle with cinnamon and sugar. Back 35 minutes at 350*.
Serve with whipped cream or ice cream.
