    Italian Chicken Stew

    List of Ingredients




    12 Boneless, Skinless Chicken Thighs, cut into 1 inch (2.5cm) pieces
    2 C (500ml) Cubed Zucchini Squash
    1 C (250ml) Pearl Onions, peeled
    1 C (250ml) Fresh Baby Carrots or Carrots cut into 1 inch (2.5cm) pieces
    2 cloves Garlic, peeled and minced
    1 T Sugar (optional)
    1/2 tsp Crushed Red Pepper Flakes
    1 tsp Dried Italian Herbs
    2 T Red Wine or Sherry (optional)
    Ground Black Pepper to taste

    Recipe



    Place the chicken into a large crock pot and then add all the remaining ingredients.

    Stir with a wooden spoon to make sure the ingredients are mixed.

    Cook on low setting at least 6 hours.

    Enjoy with a green salad and bread sticks. This stew is also nice enjoyed over pasta.
