    Orange Kiss Me Cake

    List of Ingredients


    • 6 ounces frozen concentrated orange juice (remove 1/4 cup and set this aside for the topping)
    • 1 cup sugar
    • 1 cup raisins (floured)
    • 2 eggs
    • 2 cups self-rising flour
    • 1/2 cup margerine
    • 1/2 cup evaporated or whole milk
    • 1/2 cup chopped pecans
    • Ingredients for topping:
    • 1/4 cup orange juice (from above)
    • 1 teaspoon ground cinnamon
    • 1/2 cup sugar
    • 1/2 cup chopped pecans


    Instructions


    1. Bring all ingredients to room temperature.

    2. Stir ingredients all together. Beat by hand for 3 to 5 minutes. (do not use a mixer)

    3. Pour into a 9x13 pan and bake in 350 degree oven for 35-40 minutes, or until cake springs back when gently pressed down.

    4. Spread the reserved orange juice concentrate over the hot cake.

    5. Mix cinnamon and sugar and sprinkle over the juice glazed cake.

    6. Top with chopped pecans.



    Final Comments


    If using plain flour, add 3 teaspoons of baking powder and 1/2 teaspoon salt.

    Serve warm. This was one of my favorites.
