    This jambalaya is extremely easy and so delicious it'll make you slap your momma!


    List of Ingredients


    • 1 Tbsp. Olive Oil
    • 1 medium Onion, chopped
    • 2 cloves Garlic, minced
    • 1 lb. diced Chicken Tenders
    • 1 lb. Sausage, cooked and sliced
    • 1 (10 oz.) bag frozen okra
    • 2 cups Chicken Broth
    • 2 (8 oz.) cans Tomato Sauce
    • 1 (14 oz.) can Peeled Tomatoes
    • 1 tsp. Tabasco Sauce
    • 2 Bay Leaves
    • 1 Tbsp. Gumbo File Seasoning ( or I used Crab Boil)
    • 1 lb. Shrimp, peeled and de-veined
    • 4 Green Onions, sliced
    • Salt and Pepper


    Instructions


    1. Heat oil in the 8 quart pressure pot over med. heat. Add onions and garlic and saute for 3 minutes. Add chicken, sausage, frozen okra, chicken broth, tomato sauce, peeled tomatoes, Tabasco sauce, bay leaves and gumbo file seasoning. Lock lid into place. Bring to high pressure (regulator setting 2) over high heat. Reduce heat to med-low and cook for 10 minutes. Release pressure. Add shrimp. Place glass lid on pot. Let sit with no heat for 5 minutes, or until shrimp turns pink. Season with salt and pepper. Garnish with sliced green onions before serving.
