    List of Ingredients


    • 1 lb. bag of dried pinto beans (soak overnight)
    • 1 medium onion
    • 1 package of kielbasa or smoked sausage
    • black pepper
    • butter


    Instructions


    1. In a large 5 qt. pot, empty beans and add water until beans are covered by approx. 1 inch of water.
    2. Bring to a slow boil over medium heat and then reduce heat to low. Stir occasionally and add water as needed to keep beans covered. Simmer for 3 - 5 hrs..
    3. Cut onions into 1/6ths and add to beans after 3-4 hours of cooking. Add black pepper to taste. Add 4 tbsps. (1/2 stick) butter. 1 -2 hours prior to serving cut sausage into 1 1/2" sections and then slice lengthways in half. Add to beans, cover and simmer until ready to eat.
    4. If the sauce/liquid is thin, remove cover and increase heat to boil off some of the water, then reduce heat and simmer uncovered until it thickens to desired consistency. The sauce should be brown and almost like stew or thin gravy.
    5. Serve in a large bowl with a pat of butter. Goes very well with cornbread.
