    PICKLED WATERMELON RIND

    THIS WAS A FAVORITE MADE BY MY GREAT-GRANDMOTHER MANY YEARS AGO. THIS IS A TRUE OLD FAVORITE FOR YOUNG TASTERS TO TRY.


    List of Ingredients


    • 2 1/2 QUARTS PARED WATER MELON RIND
    • COLD WATER
    • SALT
    • 1 1/2 QUARTS VINEGAR
    • 1 1/2 CUPS WATER
    • 3 POUNDS SUGAR
    • 6 PIECES CINNAMON STICKS
    • 2 TABLESPOONS WHOLE CLOVES


    Instructions


    1. REMOVE GREEN SKINS AND PINK FLESH FROM RINDS AND WEIGHT.
    2. CUT RIND IN DESIRED PIECES.
    3. PLACE IN A LARGE KETTLE AND COVER WITH WATER.
    4. ADD SALT IN THE PROPORTIONS OF 1/4 CUP SALT TO EACH 1 QUART OF WATER.
    5. SIMMER FOR 30 MINUTES.
    6. DRAIN OFF SALT WATER
    7. COVER WITH FRESH WATER AND COOK 10 MINUTES.
    8. CHANGE WATER AGAIN AND BOIL GENTLY UNTIL THE RIND IS TENDER.
    9. COVER AND LET STAND OVERNIGHT.
    10. IN THE MORNING, DRAIN OFF THE WATER.
    11. COMBINE VINEGAR, WATER, SPICES AND SUGAR AND STIR OVER LOW HEAT UNTIL SUGAR DISSOLVES.
    12. ADD THE RIND AND SIMMER 2 HOURS OR UNTIL SYRUP IS THICK AND RIND IS CLEAR.
    13. REMOVE THE SPICE, PACK IN HOT STERLIZED JARS AND SEAL AT ONCE.
