Czech Plum Dumplings

(Svestkovy Knedilicky in Czech) Diane's mom, Pat, made these wonderful dumplings for us when I visited her in July 2009. She used bing cherries. They are served with cottage cheese (traditionally, farmer's cheese), melted butter and sugar. YES! A VERY occasional treat, to be sure, but ohmygoodness, how wonderful they are!
List of Ingredients
5 large red potatoes, peeled, boiled and riced (approx 4 lbs)
2.25 cups flour (sifted)
1 egg yolk
1/2 cup sugar
2 heaping tbsp butter (unsalted)
4 tsp saltRecipe
Mix all ingredients together. Beat very thoroughly until dough loses most of its stickiness and resembles soft biscuit dough. Shape into long roll, about 2 inches in diameter. Cut into 20 slices about 1 inch thick. Pat each slice into a large circle and wrap it around a plum. Place in deep boiling water and boil, uncovered, for 15 minutes. Drain.
Serve with melted, unsalted butter, cottage cheese and sugar.
YUM!!!
Can also use cherries, peaches or nectarines.
