Creamy Italian Dressing
1 12 oz. box silken tofu
2 Tablespoons olive oil or flax oil
2 Tablespoons white wine vinegar (or other vinegar)
1 teaspoon oregano
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Blend the tofu with oil, vinegar, and all the spices in a blender or food processor until smooth and creamy. Pour into bowl or serving container. Chill and serve over salad, steamed veggies, as a raw veggie or chip dip, and more!
Thousand Island-Style Dressing
1 recipe prepared Creamy Italian Dressing
1/3 cup ketchup
1/2 teaspoon Dijon mustard
1 tablespoon sweet pickle relish
2 tablespoons pimento-stuffed green olives (minced)
1 tablespoon fresh minced parsley (or 2 tsp. dried parsley flakes)
Prepare the Creamy Italian Dressing above. Pour in to a bowl and blend in the rest of the ingredients. Now you have another completely different flavor for salads, steamed veggies, and dips that has no cholesterol and less fat than the traditional version of Thousand Island dressing.
