    List of Ingredients

    1 pound dried black-eyed peas, sorted and rinsed
    1/2 pound bacon, diced
    1 large onion, minced
    3 garlic cloves, chopped
    4 carrots
    1 bunch Tuscan kale, slivered
    8 cups chicken broth
    1/4 cup tomato paste
    1.5 teaspoons smoked paprika
    1 bay leaf
    1 teaspoon salt
    1/2 pound turkey kielbasa, cut into 1-inch pieces


    In a pressure cooker, saute bacon until crisp. Remove and reserve. Add onion, garlic, and carrot, and cook until onion is softened, about 3 minutes. Add slivered kale. Add peas and stir well. Add broth, tomato paste, paprika, bay leaf, salt. Stir in sausage. Stir until thoroughly mixed. Secure lid. Over high heat, bring to high pressure. Reduce heat to maintain pressure and cook 30 minutes. 10 minutes natural pressure release.

    6-8 servings.
