    Skillet Pork Chops


    List of Ingredients


    • 6 pork chops
    • 2/3 cups uncooked rice
    • 1 cup water
    • 2 teaspoons salt
    • 1/2 cup chooped onion
    • 1 1-lb. can tomatoes, chopped
    • 1 cup whole kernel yellow corn, cooked
    • 1/4 teaspoon black pepper


    Instructions


    1. Trim some fat from pork chops; fry out in a large skillet.
    2. Add chops and brown very slowly on both sides. Pour off excess fat.
    3. Spread rice over bottom of skillet.
    4. Add water.
    5. Sprinkle with 1 teaspoon of the salt; arrange chops over rice.
    6. Sprinkle with the other 1 teaspoon salt.
    7. Add the onion and tomatoes; spoon on the corn.
    8. Sprinkle with the black pepper.
    9. Cover and simmer 25-35 minutes or until the rice is tender.
