Pasta and Bean Soup
List of Ingredients
- 1 tablespoon oil
- 1 cup chopped onions
- 1 cup chopped celery
- 1/2 cup chopped carrot
- 2 garlic cloves, minced
- 3 (14 1/2oz.) cans Great Northern Beans, drained
- 1 (14.5 oz.) can diced, peeled tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon pepper
- 3 oz. (3/4 cup) uncooked small shell macaroni
- 4 oz. (1 cup) shredded swiss cheese
- 1/4 cup chopped fresh parsley
Instructions
- Heat oil in Dutch oven over medium heat until hot.
- Add onions, celery, carrot and garlic.
- Cook and stir 4 minutes.
- Add broth, beans, tomatoes, oregano, basil, and pepper.
- Bring to boil.
- Add macaroni.
- Reduce heat to medium.
- Cook 10-13 minutes or until macaroni and vegetables are tender.
- Sprinkle each serving with cheese and parsley.
