    2 cartons Egg Beaters, well shaken
    1/2 cup milk
    2 teaspoons balsamic vinegar
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/3 cup grated Parmesan cheese
    1 cup diced red bell peppers
    1 package frozen spinach, thawed and well-drained

    Recipe



    Preheat the oven to 350ºF. Lightly coat a large muffin tin with cooking spray. In a bowl, whisk Egg Beaters, milk, vinegar, salt and pepper. Stir in Parmesan cheese, diced red peppers and spinach. Pour mixture into muffin tin. Bake for 20 to 25 minutes or until the centre of the mixture is set. Cool on rack for 10 minutes. Ready to eat or cover each one in plastic wrap and store in the refrigerator for up to 3 days so they're ready for snacks or the school or work lunch bag.
