    4 c apples, peeled, cored and quartered [use McIntosh or Granny Smith]
    4 lg eggs, beaten
    1 c oil
    2 c all-purpose flour
    1-3/4 c sugar
    2 tsp vanilla extract
    1 tsp almond extract
    2 tsp baking soda
    2 tsp salt
    2 tsp cinnamon

    Topping:
    3/4 c flour
    1/4 c sugar
    6 TB butter [at room temp]

    Preheat oven to 350. Lightly grease two 9 x 5” loaf pans. Cut apples
    into
    1/2” chunks. In lg bowl, beat eggs till fluffy. Add oil and beat
    until
    combined. Add extracts. Add baking soda, salt and cinnamon; beat
    until
    well mixed. Add flour and sugar and mix on low just to blend. Turn
    mixer
    to high and beat until mixture is smooth; the batter will be very
    thick.
    Fold in chopped apples with a spoon. Divide mixture between the 2
    pans.

    To prepare topping, combine flour, sugar and cinnamon in small bowl.
    Cut
    butter into mixture w/fork or pastry blender. Sprinkle equal amts of
    topping on each loaf. Bake about 1 hr. Loaf should feel fairly firm
    when
    touched in center. Let cool for 5 mins before removing from pan.
