    A great use for leftovers or the rice you have already cooked in the freezer.
    If using fresh, boneless chicken, rub chicken with desired spices, cut into chunks and fry till thoroughy done. Differnt meat rubs change the flavor of this casserole dramatically, giving almost endless combinations to this dish.
    Add a nice green salad and a fruit or juice for a complete meal.

    List of Ingredients




    1 cup Extra long grain white rice
    3/4 cup sliced celery
    1/4 cup sliced green onions
    14 cup chopped green bell pepper
    1/4 cup chopped red bell pepper
    8 ounces fresh mushrooms, sliced
    2 tablespoons vegetable oil
    2 cups cubed, cooked chicken
    1/2 cup mayonnaise
    1 can (10 and 3/4 ounces) cream of chicken soup (or cream of whatever soup made with chicken bullion)

    Preheat oven to 35o degree F

    Prepare rice according to package directions. Set aside.

    Saute' celery, onions, peppers, and mushrooms in oil. Add remaining
    ingredients. Fold in rice. Pour into a oiled 1 and 1/2 quart baking
    dish.
    Bake for 20 minutes.

    Serves 6
