BATTER-FRIED FISH

1 cup all-purpose flour*
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup salad oil
2 pounds fish fillets, steaks or pan-dressed fish

Prepare batter. Measure 1 cup flour, the baking
powder, salt, egg, milk and salad oil into a
bowl; beat with rotary beater until smooth. If
fillets are large, cut into serving pieces. Coat
fish with flour, then dip in batter to coat
corn pletely.
Heat oil (1/2 to 1 inch) in large pan or deep
skillet. Cook fish in oil until golden brown,
about 4 minutes on each side. Cool quickly.
Wrap, label and freeze.
� About 25 minutes before serving, heat oven to
4OOF. Heat Batter-fried Fish on ungreased baking
sheet until hot, about 15 minutes.
*If using self-rising flour, omit baking powder and salt.
