    Coconut Cream Pie

    If you like coconut cream pies, this is a good one!

    List of Ingredients

    1 9" baked pie crust
    3 cups milk
    1/4 tsp. salt
    1/3 cup cornstarch
    1 cup sugar
    4 eggs (separated)
    3 Tblsp. butter
    1-1/2 tsp. vanilla
    1 cup flaked coconut

    Recipe

    Combine sugar, milk, salt and cornstarch in a heavy saucepan. Heat till thick and bubbly. Reduce heat and cook for 2 minutes. Separate eggs. Beat the yolks slightly and temper with hot mixture. Then return to stove and bring to a gentle boil. Cook 2 minutes more. Remove from heat and stir in vanilla, butter and coconut. Pour into baked pie crust.

    Top with meringue:

    4 egg whites
    1/4 tsp. cream of tartar
    1/4 cup sugar

    Beat until it forms stiff peaks. Spread on top of pie, and sprinkle 1/3 cup coconut on top of pie. Bake at 400 degrees for about 5 minutes (watch it so it doesn't burn).

    Chill.
