    Peanut Butter Cake w/Choc. Icing

    List of Ingredients




    1 cup flour
    1 cup (+2 Tblsp.) sugar
    3-1/2 tsp. baking powder
    1 tsp. salt
    2 cups graham crackers (crushed)
    Peanut Butter (at least 1/2 cup. If using more, decrease shortening)
    3/4 cup shortening
    1 cup plus 2 Tblsp. milk
    1 tsp. vanilla
    3 eggs

    Frosting:

    1/3 cup heavy cream
    1 stick butter
    2 Tblsp. cocoa
    2 cups powdered sugar
    1 tsp. vanilla

    Recipe



    Sift flour, sugar, baking powder and salt together. Add graham cracker crumbs, peanut butter, shortening, milk and vanilla. Beat mixture with electrix mixter on low until moistened. Then beat on medium for 2 minutes. Add eggs one at a time and beat for one minute.

    Pour into a greased and floured 9 x 13 pan. Bake at 375 degrees for 30-35 minutes. (325 degrees if using a glass dish)

    While cake is baking, prepare frosting:

    In a medium saucepan, melt butter and add cream, cocoa and vanilla. Remove from heat and pour over powdered sugar.

    While cake is still warm, poke holes in the cake with end of a wooden spoon. Pour warm frosting over cake.
