Spiced Pecans

1 egg white
8 oz. pecan halves
1/4 cup brown sugar
1 tsp. cinnamonRecipe
Preheat oven to 350. Line cookie sheet with parchment paper. (Do not attempt without parchment paper -- you will never get the pecans off the baking sheet!)
In a medium bowl, beat egg white with a fork until frothy. Add pecans and tost to coat evenly. Add the brown sugar and cinnamon and toss to coat evenly. Pour onto baking sheet and spread them out so they are in a single layer. Bake for 18-20 minutes. Remove and allow to cool slightly. When completely cooled, remove from parchment paper and store in a seal container. (or.. if it's Christmas, put them in a bowl and watch them DISAPPEAR!)
