1 cup chopped onions
1 Tblsp. minced garlic
1 Tblsp. olive oil
2 cups cooked chicken (chopped)
1 14.5 oz. can chicken broth
1-1/2 cups chopped carrots
3 celery ribs, chopped
3 Tblsp. butter
3 Tblsp. flour
1 tsp. salt
1/2 tsp. pepper
1-1/2 cups milk
1-1/2 cups shredded cheddar cheese
8 oz. wide egg noodles, cooked & drainedRecipe
In a large skillet, saute onion in olive oil for a few minutes,... then add garlice for a minute more. Add broth, carrots and celery. Bring to a boil. Reduce heat; cover and simmer for 10 to 15 minutes (until vegetables are tender).
Meanwhile, in a saucepan, melt butter. Stir in flour, salt and pepper. Stir until smooth. Gradually add milk and stir until thickened. Remove from heat and add cheese - stir till melted. Add cooked egg noodles and mix well.
Transfer to a greased 3-quart baking dish. Bake uncovered at 350 degrees for 15 to 20 minutes or until bubbly.
