    Spicy Chicken Pasta

    Recipe Introduction

    This is great for pot luck dinners or if you need to feed a crowd.

    List of Ingredients

    4 cups cooked, deboned chicken
    1 lb. Velveta cheese
    2 cans Rotel
    2 cans cream of mushroom soup
    1 medium onion, chopped
    1/4 stick butter
    2 to 3 cups chicken broth
    1/2 tsp. pepper
    3/4 tsp. salt
    1 tsp. garlic powder
    16 oz. cooked pasta (bow tie looks elegant, but spaghetti works too)

    Recipe

    Cook chicken, debone and set aside. Save broth. Combine cheese and Rotel in a large microwave safe dish and cook until melted. In a large bowl, combine soup, salt, pepper, garlic powder, and 2 cups broth. Saute onion in 1/4 stick of butter, and add to the soup mixture. Add Rotel and chicken and mix until thoroughly combined. Add cooked pasta, and add more chicken broth as needed. Place in a greased 9 x 13 casserole dish, cover and bake at 350 degrees for about 30 minutes. Freezes well! You can 1/2 this recipe for smaller crowd.
