List of Ingredients
4-1/2 pounds of cooked sweet potatoes (canned is fine)
1 cup brown sugar
1/2 cup butter, softened
2 large eggs
1 tsp. vanilla
1/4 tsp. salt
Topping:
1-1/4 cup crushed cornflakes
1/4 cup chopped pecans
1 Tblsp. brown sugar
1 Tblsp. melted butter
1-1/2 cups miniature marshmallows
Recipe
Beat cooked sweet potatoes, sugar, milk, butter, eggs, vanilla and salt with an electric mixer until smooth. Spoon into an 11 x 7 baking dish.
For topping: combine cornflakes, nuts, brown sugar and melted butter. Sprinkle in diagonal rows on top of sweet potatoes. (about 4 rows). Bake at 350 degrees for 30 minutes. Remove from oven. Sprinkle marshmallows on top in between the rows of cornflakes. Bake another 5-10 minutes.
