    Crockpot Banana Cake

    Source of Recipe

    Internet

    Recipe Introduction

This turned out a lot better than I expected. Mine took 2-1/2 hours in the crockpot, so I'm sure crockpot cook times will vary. Just watch the top, and when it starts to look done, insert a toothpick to check for doneness.

    List of Ingredients

    1/4 cup butter (room temp)
    1 cup brown sugar
    1/2 cup regular sugar
    2 eggs
    2 very ripe bananas
    1/2 cup sour cream
    1-1/2 cups flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 cup chopped pecans

    Recipe

Cream softened butter and sugars. Add eggs and mashed bananas and mix well. Add flour, salt, and baking soda and mix well. Add chopped nuts. Pour mixture into a greased and flour cake pan (one that will fit into your crockpot). I used an 8" round - it was barely big enough, and the batter almost ran over the edge. Next time, I may not pour ALL the batter in.

Cook on high for about 3 hours (or until an inserted toothpick comes out clean).

Cream cheese icing on this would be great, but it's also good by itself.
