    2 cups heavy cream
    2 tsp. vanilla
    4 large egg yolks
    1/3 cup sugar

    Recipe



    In a heavy saucepan, heat cream over low heat.

    In a mixing bowl, beat egg yolks on high for 5 minutes or until light and fluffy. Gradually add 1/3 cup sugar. Add about half the cream mixture wisking until well blended. Then pour egg mixture into remaining cream wisking until well blended.

    Pour into 4 greased ramekins and place in a large baking pan. Pour enough hot water into pan to come up halfway on ramekins. Bake 35-40 minutes at 300 degrees. Let cool to room temp, then refrigerate for at least 2 hrs.

    When ready to serve, sprinkle light brown sugar on top and put under broiler to carmelize - BUT WATCH CLOSELY!!
