    1 egg plus 2 egg whites
    1 cup milk
    1/2 cup half & half
    1 cup flour
    1-1/2 tblsp. sugar
    1/2 tsp. salt
    1 tsp. vanilla
    cooking spray

    Recipe



    Mix all ingredients with a wisk or in a blender. Cover batter and refrigerate at least 2 hours, or up to 3 days. Crepe batter should be the consistency of heavy cream.

    Spray a small skillet with cooking spray and heat on medium high.

    Lower to medium heat and pour about 1/3 cup batter into the pan. Quickly tip the pan from side to side to coat the bottom. Cook until first side is golden, then using fingers to help, turn crepe over and cook on the other side for 1 minute.

    Remove crepe from pan and place on a flat surface covered with foil or was paper. Cover the crepe with a towel or wax paper. Repeat process spraying pan about every 2 or 3 crepes.
