    List of Ingredients




    2 chicken breasts
    1 cup pineapple juice
    1/4 cup brown sugar
    2 Tblsp. soy sauce

    Margarita Butter:

    1/4 cup butter
    2 Tblsp. sugar
    2 Tblsp. dry sweet-n-sour mix

    Recipe



    Marinate chicken for at least 2 hours in the pineapple juice, sugar and soy sauce. Grill chicken for about 8 minutes on each side, brushing with marinade occasionally.

    Brush cooked chicken with Margarita Butter, and cut into bite size pieces and add to a salad of mixed greens, and top with shredded cojack cheese, chopped tomatoes and croutons.
